Toffee Apple Doughnuts

This time of year is my fave and I always have lots of parties, bonfire nights, birthdays and Halloween shenanigans planned. But, with all celebrations comes food and drink temptations - MUST RESIST. Over the next few weeks I will try and make some of my favourite autumn treats to share with you all.... starting with my 1 syn take on the toffee apple. In doughnut form!! Ingredients 50g Self Raising Flour (8 syns) Half a small pot of Quark  4 Tbsp Sweetener  1 Egg Tsp Baking Powder (1/2 syn) Tsp Vanilla essence Half a small apple, chopped finely (I don't syn cooked fruit but if you do, 180g is 3 Syns or so I've been told ) Glaze  Tbsp of Quark  Tbsp of Toffee sauce (4 Syns) Method Preheat the oven to 170°C.  Spray a mini doughnut mould with Frylight. 2 and 1/2 Syn Red Velvet Waffles

Ingredients 50g Self Raising Flour (8 syns) Half a small pot of Quark  4 Tbsp Sweetener  1 Egg Tsp Baking Powder (1/2 syn) Tbsp cocoa powder (1 syn) Red food colouring  Method Preheat the oven to 170°C.  Spray a waffle mould with Frylight. This recipe makes 4 To make the waffles, sieve the flour, cocoa powder and baking powder into a bowl.  Add the quark, sweetener, red food colouring and egg to the flour and mix well  Once combined evenly spoon the mixture into the mould and pop in the oven for about 20 minutes - *PLEASE NOTE* All ovens are different and these are only guidelines.   Remove from the oven and  top with fruit, ice cream and chocolate sauce  (after removing from the mould)

Swedish Meatballs

We all go straight for the meatballs after walking round Ikea, picking up random homey things we do not need. So, I decided to bring the Swedish balls home, with no need to purchase a flat packed kitchen sink.  This recipe serves four at 1.25 syns each. To keep it low syn I served with slimming world chips and peas.  Ingredients 16 Beef meatballs (i used muscle food ones 1 syn for 4 balls) Tbsp fresh parsley (chopped) Large red onion (chopped finely) 1/4 tsp all spice 1/2 tsp garlic granules Tsp fresh ground Pepper Pinch of salt 2 cups Beef stock Tub of plain quark 1 tbsp Dijon mustard (2 Syns) Tbsp Worcestershire sauce Frylight Method 1. Spray frying pan with frylight and fry the meatballs till cooked and then remove from the pan and set aside for later 2. Unicorn Brownies

3 Syn White chocolate and strawberry Brownies   Ingredients  100g Self Raising Flour (16 syns) 30g Flora Light (4.5 syns) 3 Tbsp Sweetener  3 Eggs Tsp Baking Powder (1/2 syn) Tsp Vanilla Essence  Tsp Strawberry flavouring 25g white chocolate chips (7 Syns) Purple/blue/pink gel food colouring 5 Mini Party rings (5 Syns) Method Preheat the oven to 170°C. Spray a baking tray with Frylight  To make the brownie, sieve the flour and baking powder into a bowl then add the butter, eggs, sweetener, vanilla essence, strawberry flavouring, chocolate chips and mix well  Once combined, divide the mixture into 4 bowls, adding a few drops of purple food colouring to one bowl, pink to another and blue to another leaving one bowl without colour in Using a spoon  add the different colours in an alternate order to the baking tray, once all the mixture is in the tray use the spoon to swirl the colours together to create a  unicorn marble effect   Cook for

Bulgogi Beef

Fakeaway at its finest. This Korean inspired beef dish was absolutely delicious and only 2 syns per serving. This recipe served 2 adults. Ingredients 2 Steaks ( I used rump because its what I had in the fridge) 5 Tbsp of dark Soy sauce Tbsp of clear Honey (2.5 Syns) Tsp Sesame oil (2 Syns) One Garlic clove Tbsp of fresh ginger Tsp fresh ground black Pepper 1/2 Tsp of Chilli powder Fresh Chilli to garnish (optional) Sesame seeds to garnish Method  1. First make your marinade by mixing in a bowl the garlic, ginger, 2 tbsp of the soy sauce, sesame oil, half the honey, chilli powder and black pepper. Place the steak in the marinade making sure all the meat is covered and then chill in the fridge for 30 minutes 2. Heat a large frying pan (needs to be very hot!!!) and place the steak and the marinade in the pan and fry on both sides. Fluffy American Style Pancakes

      So after the roulade being such a hit I wondered if I could use the same method to create fluffy pancakes, because the oat ones just do not do it for me. After a few tweaks and attempts I got the most perfect fluffy American style pancake that are only half a Syn for 3. I have experimented by adding a few different ingredients to create, red velvet, plain, and my latest pumpkin spice flavour. I am pretty sure I will be conjuring some more up soon! so keep an eye out for pancake topping inspo!! This recipe is for the plain ones, this means you can add whatever flavors you like.
